Pukka lasagne


It’s been a while since I last shared a recipe. My critics (my children) are not easily impressed by my cooking so on rare occasion when they do get excited, I make it a point to record it.

Today’s recipe is by fluke. I didn’t expect it to turn out so well and was pleasantly surprised when my kids asked for second and third helping.

To make this homemade mushroom and spinach lasagne, you’ll need some fresh mushroom about 250 gm. Remember, do not wash fresh mushrooms. Instead remove its skin and brush off any dirt visible and then slice it. I used a whole block (250 gm) of sharp cheddar cheese, grated.

You will also need a large onion and 5 garlic cloves, chopped fine. Two cups of spinach (leaves), one cup of frozen peas, a can of condensed tomato soup about 420 gm and some lasagne sheets.


Saute the onion and garlic in some oil or butter until they are fragrant. Then add the sliced mushrooms and cook until softened. This should take about five minutes. Add the frozen peas together with the condensed tomato soup. I also added half can of boiled water because I found the tomato soup too sweet. Season with some salt and pepper. Let this simmer in your pot for a couple of minutes.

Grease two deep ovenproof dish and assemble the lasagne in it. Start with the some sauce from the pot, followed by some lasagne sheets (enough to cover the base of your ovenproof dish. Then gently ladle contents from the pot, followed by some raw spinach leaves and top it with some grated cheese. This would be your first layer. Keep repeating this pattern for both the dishes until you have used up all ingredients.


Cling wrapper both these dishes and store them in the refrigerator for later use. When ready, replace the cling wrap to tin foil and just pop these in a preheated oven at 200’C. Cook it for about 20 minutes or until the top layer is golden brown and your house kitchen has a beautiful pizza aroma.


Hope you will enjoy it as much as we did. You could also make a large batch and make individual portions which you can store in your freezer. So on crazy days when you have no time for a proper meal, you can just rely on this homemade lasagne.
